Garbanzo bean cookies! My kids wanted something baked and wanted it without any sunbutter because they don’t like their cookies to taste like sunbutter. I wanted lots of fiber for them. I didn’t make these sugar free though. I may try that next time, but I expect sugar free wouldn’t turn out as soft and gooey as these! 2 grams of fiber per bite.
High Fiber Cookie Bites (Gluten, Dairy, Soy, Egg, and Peanut Free)
- 6 Tbsp of coconut oil, melted
- 4 cups of garbanzo beans, rinsed, deskinned (2 lb 15 oz can)
- 3/4 cup brown sugar
- 2 Tbsp vanilla extract2/3 cup oat flour
- 3 tsp baking soda2 tsp salt
- 1 tsp xanthan gum
- 1 package of dairy and soy free chocolate chips (we like Enjoy Life Chocolate Chips)
Preheat oven to 350F. In a food processor, mix the garbanzo beans, melted coconut oil, brown sugar, and vanilla until smooth. Meanwhile, mix together the remaining dry ingredients except the chocolate chips. Add that to the food processor and mix until smooth. Stir in chocolate chips. Chill dough for about 20 minutes. Scoop with a cookie scoop or or by the Tbsp full onto parchment paper lined cookie sheet. Wet fingers and press dough flat. Bake for 8 minutes. Cool on the pan.
